A classroom kitchen is a second language lab: history, geography, and a meal the class can share.
A country becomes real when a class can smell it. Put a comal, a pot of rice, and a Tuesday recipe in front of students and the map on the wall starts to mean something — trade routes, harvests, the reason a spice crossed an ocean.
Teachers, after-school clubs, and university kitchens can start with any of the thirty volumes that are live today. A tasting that is also a lesson. A small pantry built the way a library builds a shelf. A semester that ends at a table.
