Tortilla press

Two plates and a lever: nixtamal dough becomes a round you can cook on the comal in one motion.

The journey

Hands made tortillas for centuries. The press made the weekday possible: a ball of masa, two plates, a press, a peel onto the comal. Eight Mexican recipes name it because the book assumes you might actually make the bread, not only heat a package.

The comal is the hearth. The press is how the hearth gets fed.

In the kitchen

Line the plates with plastic or a cut bag. Press firmly, peel gently, cook on a hot comal until it puffs. Stack under a cloth.

A rolling pin can fake a round. It will not give you the same even thinness the press was invented for.
