Çiğ Köfte

Ingredients

  • 300 gfine bulgur
  • 2 tbsppepper paste
  • 1onion

Method

  1. Start by finely chopping the onion. Place the chopped onion in a large mixing bowl, as this will be the vessel where all the ingredients come together. Ensure the onion is finely chopped to release its juices and flavors effectively into the mixture.
  2. Add 300 g of fine bulgur to the bowl with the onion. Use your hands to mix them together, allowing the onion juices to begin softening the bulgur. This step is crucial as it helps the bulgur absorb flavors and achieve the right texture.
  3. Incorporate 2 tablespoons of pepper paste into the bulgur and onion mixture. Use your hands to knead the mixture, ensuring the paste is evenly distributed. The pepper paste will give the mixture a vibrant color and a deep, spicy flavor.
  4. Season the mixture with fine sea salt and black pepper to taste. Continue kneading until the bulgur becomes tender and the mixture holds together when pressed. This texture indicates that the bulgur has absorbed enough moisture and flavor.
  5. To serve, tear lettuce leaves into large pieces and arrange them on a serving platter. Shape the Çiğ Köfte mixture into small, bite-sized pieces using your hands, and place them on the lettuce leaves. The lettuce provides a fresh, crisp contrast to the spicy, chewy köfte.
