American Crispy Fritters are a staple at home tables across the country, especially during the bountiful summer months when zucchini is at its peak. These fritters are not bound by the constraints of a specific holiday or occasion, making them a versatile dish that fits seamlessly into any gathering or family meal. The recipe is written the way an American family cook would prepare it, with generous use of oil and a hearty sprinkle of salt judged by hand.

Ingredients

  • 3zucchini — grated
  • 2eggs
  • 4 tbspflour
  • for fryingoil

Method

  1. Grate the 3 zucchini using the large holes of a box grater. Place the grated zucchini in a clean kitchen towel, gather the edges, and twist tightly to squeeze out as much moisture as possible. This step is crucial to ensure your fritters are crispy and not soggy.
  2. In a large mixing bowl, crack 2 eggs and beat them lightly with a fork. Add the squeezed zucchini, 4 tablespoons of flour, a handful of chopped herbs of your choice, and a generous pinch of fine sea salt and black pepper. Stir the mixture until all the ingredients are well combined and the flour is fully incorporated.
  3. Choose a large skillet or frying pan and pour in enough oil to coat the bottom generously, about 1/4 inch deep. Heat the oil over medium-high heat until it shimmers, indicating it's hot enough for frying.
  4. Using a spoon or your hands, scoop a portion of the zucchini mixture and shape it into a small patty, about the size of your palm. Carefully place the patty into the hot oil. Repeat with additional patties, being careful not to overcrowd the pan, which can lower the oil's temperature.
  5. Fry the fritters for about 3 to 4 minutes on each side, or until they are golden brown and crispy. You’ll know they are ready to flip when the edges start to firm up and you see a deep golden color creeping up the sides.
  6. Once the fritters are cooked, use a slotted spatula to transfer them to a plate lined with paper towels to drain any excess oil. While still hot, sprinkle a little more fine sea salt over the top to enhance the flavor.
