Method

  1. Start by preparing the vegetables. Wash and dry 400 g of your chosen vegetables thoroughly. Cut them into bite-sized pieces, ensuring they are uniform in size for even cooking. Set them aside on a clean kitchen towel to absorb any remaining moisture.
  2. In a large mixing bowl, combine 100 g of flour with a pinch of fine sea salt and black pepper to taste. Toss the vegetable pieces in the seasoned flour, making sure each piece is well-coated. This will help the vegetables crisp up nicely when fried.
  3. Choose a heavy-bottomed skillet or frying pan and pour in enough oil for frying, about 1 to 2 inches deep. Heat the oil over medium-high heat until it shimmers and a small piece of vegetable dropped in sizzles immediately.
  4. Carefully add the floured vegetables to the hot oil in batches, avoiding overcrowding the pan. Fry them until they turn golden brown and crispy on the outside, about 3 to 5 minutes per batch. Use a slotted spoon to transfer the fried vegetables to a paper towel-lined plate to drain excess oil.
  5. Once all the vegetables are fried, transfer them to a serving platter. Squeeze fresh lemon juice over the top for a bright, tangy finish. Sprinkle with additional fine sea salt to taste, ensuring each piece is well-seasoned.
