American Grilled Skewers are a backyard staple, especially when the weather turns warm and the grill takes center stage. Lamb cubes marinate in a blend of olive oil, cumin, salt, and pepper, then hit the grill for a quick sizzle before landing on the table.

The skewers offer a tender bite with a smoky edge, the cumin weaving a warm spice through each juicy morsel of lamb. The onion adds a subtle sweetness, perfectly balancing the savory richness. Ingredients

  • 600 glamb cubes
  • 1onion
  • 2 tbspolive oil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Start by preparing the lamb cubes and onion. Cut the onion into large chunks, similar in size to the lamb cubes, to ensure even cooking. Thread the lamb cubes and onion pieces onto skewers, alternating between the two to distribute flavors evenly.
  2. In a small bowl, combine 2 tablespoons of olive oil with 1 teaspoon of cumin. Stir well to create a marinade that will enhance the flavors of the lamb and onion. Brush this mixture generously over the skewered lamb and onion, ensuring each piece is well-coated.
  3. Preheat your grill to medium-high heat. This temperature will provide a good sear on the lamb while keeping the inside juicy. If using a stovetop grill pan, heat it over medium-high heat until it's hot enough that a drop of water sizzles upon contact.
  4. Place the skewers on the grill or grill pan. Cook them for about 4-5 minutes on each side, turning occasionally to ensure even cooking. The lamb should develop a nice char on the outside, and the onion should start to soften and caramelize.
  5. Check the doneness of the lamb by cutting into a piece; it should be juicy with a hint of pink in the center. This indicates the lamb is cooked to medium, which is ideal for tenderness and flavor. Adjust cooking time slightly if you prefer your lamb more or less cooked.
  6. Once the skewers are cooked to your liking, remove them from the grill. Season with fine sea salt and black pepper to taste, allowing the flavors to pop. Serve the skewers immediately, encouraging everyone to enjoy the communal experience of sharing from the platter.
