Ingredients

  • 400 gshrimp or white fish
  • 100 gflour
  • 1egg

Method

  1. Start by preparing your seafood. If using shrimp, peel and devein them, then chop into small pieces. If using white fish, ensure it's deboned, then cut into small chunks. This ensures even cooking and a consistent texture in your fritters.
  2. In a large mixing bowl, combine the chopped seafood with 100 g of flour and 1 egg. Stir until the mixture is well combined and forms a thick batter. This batter will hold the seafood together when frying.
  3. Heat a generous amount of oil in a large skillet over medium-high heat. You want enough oil to cover the bottom of the pan by about 1/4 inch. This ensures the fritters cook evenly and develop a crispy exterior.
  4. Once the oil is hot, carefully drop spoonfuls of the seafood batter into the skillet. Do not overcrowd the pan; leave space between each fritter to allow them to cook evenly. Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy. The seafood should be opaque and firm to the touch.
  5. Remove the fritters from the skillet and place them on a plate lined with paper towels to drain any excess oil. This step helps maintain their crispiness.
  6. Finish the fritters by squeezing fresh lemon juice over them and sprinkling with fine sea salt to taste. The lemon adds brightness and the salt enhances the flavors of the seafood. Serve immediately while they are hot and crispy, perfect for sharing at the table.
