Ingredients

Method

  1. Start by preparing your seafood. If you're using shrimp, peel and devein them, then chop into small pieces. If using white fish, such as cod or haddock, cut it into small, bite-sized chunks. This ensures even cooking and a uniform texture in the fritters.
  2. In a mixing bowl, combine 100 g of flour with a pinch of fine sea salt. Crack 1 egg into the bowl and whisk until a smooth batter forms. The batter should be thick enough to coat the back of a spoon but not too stiff.
  3. Gently fold the prepared seafood into the batter, ensuring each piece is well-coated. This step is crucial for binding the seafood and batter together, which will help the fritters hold their shape during frying.
  4. Heat a generous amount of oil in a large skillet over medium-high heat. The oil should be about 1/4 inch deep to allow for even frying. To test if the oil is ready, drop a small bit of batter into the oil; it should sizzle immediately and float to the surface.
  5. Carefully spoon the seafood batter into the hot oil, forming small mounds. Fry the fritters in batches, ensuring not to overcrowd the pan, which can lower the oil temperature and result in greasy fritters. Cook each side for about 3-4 minutes, or until the fritters are golden brown and crispy.
  6. Once the fritters are cooked, use a slotted spoon to transfer them to a plate lined with paper towels. This will help drain any excess oil, keeping the fritters crisp.
  7. Finish by sprinkling the fritters with a touch more fine sea salt to enhance their flavor. Serve immediately with lemon wedges on the side for a fresh, zesty contrast.
