American Stuffed Vegetables are a weeknight favorite, capturing the ease and warmth of home cooking. This version draws from a familiar kitchen ritual, where the choice between bell peppers or tomatoes is made on a whim and the pantry dictates the rest. It's a dish that doesn't stand on ceremony but rather embraces the casual nature of family meals, where measuring cups are often replaced by instinct.

The flavors are robust yet comforting, with tender rice absorbing the essence of herbs and the sweetness of roasted vegetables. A generous splash of olive oil lends richness, while finely judged salt and black pepper ensure each bite is savory and satisfying. Serve them straight from the oven, letting everyone scoop their own from the baking dish.

Ingredients

  • 4peppers or tomatoes
  • 150 grice
  • 1onion
  • 80 mlolive oil
  • herbs — chopped
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing your vegetables. If using peppers, slice off the tops and remove the seeds and membranes inside, creating a hollow shell. For tomatoes, slice off the tops and scoop out the insides with a spoon, being careful not to pierce the skin. Set these aside for stuffing later.
  2. Rinse 150 g of rice under cold water until the water runs clear to remove excess starch. This will help the rice cook more evenly and prevent it from becoming too sticky. Drain well and set aside.
  3. Finely chop 1 onion and set it aside. Heat 80 ml of olive oil in a large skillet over medium heat. Once the oil shimmers, add the chopped onion and sauté until it becomes translucent and soft, about 5 minutes. This will build the base flavor for your stuffing.
  4. Add the rinsed rice to the skillet with the onions. Stir to coat the rice in the oil and onion mixture, allowing it to absorb the flavors. Cook for about 2-3 minutes until the rice grains start to look slightly opaque.
  5. Add your choice of herbs to the skillet. This could be a mix of parsley, thyme, or oregano, depending on your preference. Stir them into the rice and onion mixture, allowing the heat to release their aromas and flavors.
  6. Carefully stuff each prepared pepper or tomato with the rice mixture, pressing down gently to pack it in. Place the stuffed vegetables in a baking dish, arranging them snugly so they support each other and don't tip over during baking.
  7. Drizzle a little more olive oil over the tops of the stuffed vegetables and season with fine sea salt and black pepper to taste. Cover the baking dish with foil to trap steam, which will help cook the rice.
  8. Bake in a preheated oven at 375°F (190°C) until the vegetables are tender and the rice is fully cooked, about 45-60 minutes. You'll know they're done when the vegetables are soft to the touch and the rice inside is tender and fluffy.
  9. Remove the foil for the last 10 minutes of baking to allow the tops to brown slightly, adding a bit of texture and flavor. Once done, remove from the oven and let them cool slightly before serving. Enjoy your American Stuffed Vegetables warm, sharing them at the table.
