  2. In a large mixing bowl, crack open the 2 eggs and beat them lightly with a fork until the yolks and whites are combined. Add the squeezed zucchini to the eggs, followed by 4 tablespoons of flour. Stir the mixture until the flour is fully incorporated and the batter is thick and cohesive.
  3. Chop your choice of fresh herbs, such as parsley or cilantro, and add them to the batter. Season the mixture with fine sea salt and black pepper to taste, keeping in mind that the salt will enhance the natural flavors of the zucchini and herbs.
