Brasileiro Fried Bites 2

Brasileiro Fried Bites 2 are a staple at Brazilian home tables, where this dish is lovingly crafted with a pinch of salt judged by hand and a generous splash of oil. It's a quintessential comfort food, often enjoyed during casual family meals or when friends gather for a laid-back evening. This version captures the essence of home cooking, reflecting the unpretentious yet savory nature of Brazilian culinary tradition.

These bites should be crispy on the outside with a tender vegetable center, perfectly seasoned with fine sea salt and a hint of black pepper. A squeeze of fresh lemon adds a bright finish, enhancing the rich flavors that meld together in each delectable morsel.

Ingredients

  • 400 gvegetables — sliced
  • 100 gflour
  • for fryingoil
  • lemon — to serve
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing your vegetables. Choose a mix of colorful vegetables like bell peppers, zucchini, and carrots, totaling 400 g. Wash them thoroughly, then cut into bite-sized pieces, ensuring uniformity for even cooking. Set the prepared vegetables aside.
  2. In a large mixing bowl, combine 100 g of flour with a generous pinch of fine sea salt and freshly ground black pepper to taste. This seasoned flour will coat the vegetables, adding flavor and helping them crisp up during frying.
  3. Pour enough oil into a deep frying pan or medium-sized pot to submerge the vegetables partially. Heat the oil over medium-high heat. You’ll know it’s ready when a small piece of vegetable sizzles and rises to the surface immediately.
  4. While the oil is heating, toss the prepared vegetables in the seasoned flour, ensuring each piece is well-coated. Shake off any excess flour to prevent clumping and ensure a light, crispy texture.
  5. Carefully add the floured vegetables to the hot oil in batches, avoiding overcrowding the pan. Fry them until they turn golden brown and crisp, stirring occasionally for even cooking. The vegetables should be tender inside with a crispy exterior.
  6. Once fried, use a slotted spoon to transfer the vegetables to a plate lined with paper towels to drain any excess oil. Immediately sprinkle with additional fine sea salt to enhance the flavor while they are still hot.
  7. Finish by squeezing fresh lemon juice over the fried bites for a burst of acidity that complements the rich flavors. Serve the Brasileiro Fried Bites 2 immediately, encouraging everyone to share and enjoy the dish while it's hot and crispy.
