Ingredients

  • 600 glamb cubes
  • 1onion
  • 2 tbspolive oil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Start by cutting the onion into large, even pieces, roughly the same size as the lamb cubes. This ensures even cooking and allows the onion to caramelize nicely alongside the lamb. Thread the lamb cubes and onion pieces alternately onto skewers, leaving a little space between each piece to allow heat to circulate.
  2. In a small bowl, combine 2 tablespoons of olive oil with 1 teaspoon of cumin. Stir well to blend the cumin into the oil, which will help distribute the spice evenly over the lamb and onion, enhancing their flavors.
  3. Brush the cumin-infused olive oil generously over the skewers, ensuring each piece of lamb and onion is well-coated. This will not only add flavor but also help prevent the skewers from sticking to the grill.
  4. Preheat your grill to a medium-high setting. If using a stovetop grill pan, heat it over medium-high heat until it is hot but not smoking. The high heat will sear the lamb, locking in juices and creating a flavorful crust.
  5. Place the skewers on the grill or grill pan. Cook them for about 3-4 minutes on each side, turning occasionally. The lamb should develop a rich brown crust on the outside while remaining juicy inside. The onions should be slightly charred and tender.
  6. Once the skewers are cooked to your liking, remove them from the heat. Sprinkle fine sea salt and freshly ground black pepper over the skewers to taste. The salt will enhance the natural flavors of the lamb and onion, while the pepper adds a subtle heat.
  7. Serve the skewers immediately, while they are hot and juicy. Arrange them on a platter for a family-style meal, inviting everyone to share and enjoy this traditional Brazilian dish.
