Brasileiro Meat Pastry Bites 2

Brasileiro Meat Pastry Bites 2 captures the essence of Brazilian comfort food, cherished at family gatherings and casual get-togethers. This home-style rendition, passed down through generations, invites you to experience the warmth of Brazilian hospitality with each bite. Salt is intuitively measured, and a liberal hand with fat ensures a rich, indulgent flavor that mirrors the approach of Brazilian home cooks.

These pastry bites deliver a delightful contrast: crisp, golden wrappers encase a savory filling of seasoned ground beef and sautéed onions. Each bite offers a satisfying crunch followed by a burst of juicy, well-seasoned meat. Enjoy them hot, straight from the frying oil, where their flavors are at their most vibrant and comforting.

Ingredients

  • 300 gground beef
  • 1onion
  • 12pastry wrappers
  • for fryingoil
  • to tastefine sea salt and black pepper

Method

  1. Start by finely dicing 1 onion, ensuring the pieces are small enough to blend well with the ground beef. This will help the onion cook evenly and release its sweetness, enhancing the flavor of the meat. Set aside the diced onion.
  2. In a large skillet, pour enough oil to cover the bottom generously and heat it over medium-high until it shimmers. Add the diced onion to the hot oil, stirring occasionally, until the onion becomes translucent and starts to develop a golden hue. This indicates that the onion is releasing its natural sugars and is ready for the next step.
  3. Add 300 g of ground beef to the skillet with the onions. Use a wooden spoon to break up the meat into small pieces, ensuring it cooks evenly. Cook until the beef is browned and cooked through, with no pink remaining. Season the mixture with fine sea salt and black pepper to taste, stirring well to combine.
  4. Lay out 12 pastry wrappers on a clean surface. Place a small spoonful of the beef and onion mixture in the center of each wrapper, being careful not to overfill them. This will ensure the wrappers seal properly and do not burst during frying.
  5. Fold each pastry wrapper over the filling to form a half-moon shape. Press the edges firmly with your fingers or a fork to seal them tightly. This step is crucial to prevent the filling from leaking out during frying.
  6. In a deep frying pan, heat enough oil to submerge the pastries over medium-high heat. Once the oil is hot, carefully add the pastries in batches, frying them until they are golden brown and crispy on both sides. The color will indicate that the wrappers are cooked and the filling is hot.
  7. Remove the pastries from the oil using a slotted spoon and drain them on paper towels to remove excess oil. Finish with a light sprinkle of fine sea salt while they are still hot to enhance their flavor.
  8. Serve the Brasileiro Meat Pastry Bites immediately, while they are warm and crispy. These are best enjoyed fresh, with family and friends gathered around the table.
