Ingredients

  • 150 grice

  • 80 mlolive oil

Method

  1. Begin by preparing the vegetables. If using peppers, slice off the tops and remove the seeds and membranes. If using tomatoes, carefully cut off the tops and scoop out the insides with a spoon, being cautious not to puncture the outer flesh. Set the prepared vegetables aside on a plate.
  2. Rinse 150 g of rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming too sticky. Drain the rice thoroughly and set it aside.
  3. Finely chop 1 onion and any herbs you plan to use, such as parsley or cilantro, to enhance the flavor. In a medium-sized saucepan, heat 80 ml of olive oil over medium heat. Once the oil is shimmering, add the chopped onion and sauté until it becomes translucent and fragrant, stirring occasionally.
  4. Add the rinsed rice to the saucepan with the onions. Stir well to coat the rice with the oil and onion mixture. This step helps to lightly toast the rice, enhancing its flavor. Cook for about 2 minutes, or until the rice grains appear slightly opaque.
  5. Pour in enough water to cover the rice by about 1 cm. Season with fine sea salt and black pepper to taste. Bring the mixture to a gentle simmer, then reduce the heat to low and cover the saucepan with a lid. Cook until the rice is tender and has absorbed all the water, which you can tell by tasting a grain to ensure it's cooked through.
  6. Preheat your oven to 180°C (350°F). Stuff each prepared vegetable with the cooked rice mixture, pressing down gently to pack it in. Arrange the stuffed vegetables in a baking dish, ensuring they fit snugly to prevent them from tipping over.
  7. Drizzle a little more olive oil over the tops of the stuffed vegetables for added richness. Place the baking dish in the preheated oven and bake until the vegetables are tender and the tops are slightly golden. For peppers, this means the skin should be wrinkled and soft; for tomatoes, the flesh should be easily pierced with a fork.
