Ingredients

  • 3zucchini — grated
  • 2eggs
  • 4 tbspflour

Method

  1. Begin by grating the 3 zucchini using the large holes of a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out as much liquid as possible. This step is crucial to ensure the fritters are crispy and not soggy.
  2. In a large mixing bowl, beat 2 eggs until the yolks and whites are fully combined. Add the squeezed zucchini to the bowl along with 4 tablespoons of flour. Mix well until the flour is fully incorporated, creating a thick batter.
  3. Chop your choice of fresh herbs finely, such as cilantro or parsley, and add them to the batter. Season the mixture with fine sea salt and black pepper to taste, stirring until the herbs and seasoning are evenly distributed throughout the batter.
  4. Heat a generous amount of oil in a large frying pan over medium-high heat. You want enough oil to cover the bottom of the pan to ensure even frying. Test the oil's readiness by dropping a small bit of batter into the pan; it should sizzle immediately.
  5. Once the oil is hot, use a tablespoon to scoop the batter into the pan, flattening each scoop slightly with the back of the spoon to form small patties. Fry the fritters in batches, ensuring not to overcrowd the pan, which can lower the oil temperature.
  6. Cook the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy. You will notice a fragrant aroma and the edges will become visibly crisp. Carefully flip them using a spatula to cook the other side.
