Caribbean Crispy Fritters 3

Caribbean Crispy Fritters 3 is a dish that resonates with the everyday rhythms of home cooking in the Caribbean. This version, true to its roots, is crafted with a generous hand, celebrating the spirit of family meals where everyone gathers around the table. It’s a staple that finds its place during casual lunches or as a delightful snack, embodying the informal yet earnest approach of Caribbean family kitchens.

The fritters are a crispy delight, with shreds of zucchini bound by eggs and flour, seasoned just right with fine sea salt and black pepper. Each bite offers a satisfying crunch, followed by the subtle earthiness of zucchini and the freshness of herbs. Serve them hot, straight from the pan, best enjoyed in good company, where the joy of sharing is as essential as the dish itself.

Ingredients

  • 3zucchini — grated
  • 2eggs
  • 4 tbspflour
  • for fryingoil
  • herbs — chopped
  • to tastefine sea salt and black pepper

Method

  1. Begin by grating the 3 zucchini using the large holes of a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial to ensure the fritters are crispy and not soggy.
  2. In a large mixing bowl, beat 2 eggs until the yolks and whites are fully combined. Add the squeezed zucchini to the eggs, followed by 4 tablespoons of flour. Mix until the ingredients are well incorporated, creating a batter that holds together when pressed.
  3. Finely chop your choice of herbs, such as cilantro or parsley, and add them to the batter. Season generously with fine sea salt and black pepper to taste. Stir the mixture until the herbs and seasoning are evenly distributed throughout the batter.
  4. Heat a generous amount of oil in a large skillet over medium-high heat. The oil should cover the bottom of the pan to a depth of about 1/4 inch. To test if the oil is ready, drop a small piece of batter into the pan; it should sizzle immediately and float to the surface.
  5. Using a spoon, carefully drop heaping tablespoons of the batter into the hot oil, flattening them slightly with the back of the spoon. Fry the fritters in batches, ensuring not to overcrowd the pan, which can lower the oil temperature.
  6. Cook each fritter for about 3-4 minutes on each side, or until they are golden brown and crispy. The edges should be firm and the center cooked through, with a pleasant aroma of the herbs wafting from the pan.
  7. Once cooked, remove the fritters from the oil and place them on a plate lined with paper towels to drain any excess oil. Finish with a light sprinkle of fine sea salt while they are still hot, and serve immediately for the best texture and flavor.
