Ingredients

Method

  1. Start by preparing the vegetables. Wash and dry 400 g of vegetables thoroughly. Cut them into bite-sized pieces, ensuring they are uniform for even cooking. Set them aside in a large bowl.
  2. In a separate bowl, combine 100 g of flour with a pinch of fine sea salt and black pepper to taste. Mix well to ensure the seasoning is evenly distributed throughout the flour.
  3. Heat a generous amount of oil in a deep frying pan over medium-high heat. You need enough oil to submerge the vegetable pieces halfway. Wait until the oil is shimmering, indicating it's hot enough for frying.
  4. While the oil heats, dredge the vegetable pieces in the seasoned flour, ensuring each piece is well-coated. Shake off any excess flour to prevent clumping in the oil.
  5. Carefully place the floured vegetables into the hot oil in batches, ensuring not to overcrowd the pan. Fry them until they are golden brown and crispy on the outside, which should take about 4-5 minutes per batch. The vegetables should be tender inside but not mushy.
  6. Once fried, use a slotted spoon to remove the vegetables from the oil and place them on a paper towel-lined plate to drain any excess oil. Immediately sprinkle with a little more fine sea salt while still hot to enhance the flavor.
  7. Finish by squeezing fresh lemon juice over the fried bites for a burst of freshness. Serve the Caribbean Fried Bites 2 immediately while they are hot and crispy, perfect for sharing at the table.
