Caribbean Fried Bites 3

Caribbean Fried Bites 3 brings the essence of home-cooked Caribbean meals to your kitchen. Traditionally prepared with a generous hand, these bites are a staple on family tables across the islands, embodying the spirit of communal dining. This version, true to how Caribbean families prepare it, invites you to judge the salt by hand and share the vibrant result with loved ones.

Crisp and golden on the outside, tender and flavorful inside, these bites are seasoned with fine sea salt and black pepper, finished with a squeeze of lemon for a bright touch. The frying oil imbues them with a rich, satisfying texture, perfect for enjoying straight from the plate, warm and inviting.

Ingredients

  • 400 gvegetables — sliced
  • 100 gflour
  • for fryingoil
  • lemon — to serve
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing the vegetables. Wash and peel them if necessary, then chop into small, uniform pieces about the size of a small dice. This ensures even cooking and a consistent texture in the bites. Set the chopped vegetables aside.
  2. In a large mixing bowl, combine the 100 g of flour with a pinch of fine sea salt and a few grinds of black pepper. This seasoned flour will coat the vegetables, adding flavor and helping them to crisp up when fried.
  3. Add the chopped vegetables to the bowl with the seasoned flour. Toss them thoroughly to ensure each piece is evenly coated. This step is crucial for achieving a crispy exterior on the bites.
  4. Select a deep frying pan or a heavy-bottomed pot and fill it with enough oil for frying, about 2 inches deep. Heat the oil over medium-high heat until it reaches about 350°F (175°C). You can test the oil by dropping a small piece of coated vegetable into it; it should sizzle and rise to the surface quickly.
  5. Carefully add the flour-coated vegetables to the hot oil in batches, making sure not to overcrowd the pan. Fry them until they turn a golden brown and become crispy, which should take about 3 to 5 minutes per batch. Use a slotted spoon to remove them from the oil and drain on paper towels.
  6. Once all the vegetables are fried, transfer them to a serving platter. Squeeze fresh lemon juice over the top to add brightness and balance the flavors. Taste and adjust the seasoning with additional fine sea salt and black pepper if needed.
  7. Serve the Caribbean Fried Bites immediately while they are still hot and crispy. These are best enjoyed fresh, offering a delightful contrast between the crunchy exterior and the tender vegetables inside.
