Caribbean Fried Bites

Caribbean Fried Bites are a beloved staple at home tables across the islands, a celebration of simple ingredients transformed by the skilled hands of family cooks. While each household might have its own variation, the essence remains the same: a comforting dish prepared with a sense of intuition and generosity. It's a go-to for any casual gathering or a relaxed weekend meal, where the focus is on sharing and savoring.

Ingredients

  • 400 gvegetables — sliced
  • 100 gflour

Method

  1. Begin by washing and chopping 400 g of vegetables into bite-sized pieces. Choose a mix of your favorite Caribbean vegetables such as sweet potatoes, plantains, or bell peppers. Ensure the pieces are uniform in size for even cooking.
  2. In a large mixing bowl, combine the chopped vegetables with 100 g of flour. Toss them well until each piece is lightly coated. This flour coating will help create a crisp exterior when fried.
  3. Heat a generous amount of oil in a deep frying pan or pot over medium-high heat. The oil should be about 2 inches deep to allow the vegetables to fry evenly. Test the oil's readiness by dropping a small piece of coated vegetable into it; if it sizzles and rises to the surface, the oil is ready.
  4. Carefully add the flour-coated vegetables to the hot oil in batches, ensuring not to overcrowd the pan. Fry them for about 3-5 minutes, turning occasionally, until they are golden brown and crispy on the outside. The vegetables should be tender inside when pierced with a fork.
  5. Once fried, use a slotted spoon to remove the vegetables from the oil and place them on a paper towel-lined plate to drain excess oil. This will keep them crispy.
  6. Cut a lemon in half and squeeze its juice over the fried vegetables while they are still hot. This adds a bright, tangy flavor that complements the crispy bites.
  7. Season the fried bites with fine sea salt and black pepper to taste. Toss them gently to ensure even seasoning.
  8. Serve the Caribbean Fried Bites immediately while they are hot and crispy. These are perfect for sharing around the table, embodying the communal spirit of Caribbean home cooking.
