Ingredients

  • 600 glamb cubes
  • 1onion
  • 2 tbspolive oil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Start by peeling and chopping 1 onion into large chunks, about the same size as the lamb cubes. This ensures even cooking and allows the onion to caramelize nicely on the grill. Set the onion aside.
  2. In a large mixing bowl, combine 600 g of lamb cubes with 2 tbsp of olive oil and 1 tsp of cumin. Use your hands to mix thoroughly, ensuring each piece of lamb is well-coated with the oil and spices. This step infuses the lamb with flavor and helps prevent it from sticking to the grill.
  3. Season the lamb mixture with fine sea salt and black pepper to taste. Toss again to distribute the seasoning evenly. The salt will help to enhance the natural flavors of the lamb and spices.
  4. Thread the lamb cubes and onion chunks alternately onto skewers, pressing them together gently. This helps the flavors meld and ensures the skewers cook evenly.
  5. Preheat your grill to a medium-high heat. Place the skewers on the grill, turning occasionally to ensure even cooking. Look for a nice char on the outside and a juicy, tender interior. The lamb should have a slightly firm texture and a rich, aromatic smell when done.
  6. Once the skewers are cooked through, remove them from the grill and let them rest for a couple of minutes. This allows the juices to redistribute, keeping the lamb moist.
