Caribbean Grilled Skewers

Caribbean Grilled Skewers bring the warmth of island hospitality to your plate, showcasing the way home cooks craft this dish for family and friends. While the grill sizzles, the cook relies on practiced hands to measure salt and a generous heart for the rich olive oil. A staple at gatherings, these skewers capture the essence of informal Caribbean dining, where everyone reaches for a share.

The skewers offer a fragrant blend of cumin and tender lamb, with the mellow sweetness of grilled onions. Each bite is a balance of savory and aromatic, seasoned just right by intuition. Serve them hot and let the flavors transport you to a breezy Caribbean evening, where the food is as vibrant as the company.

Ingredients

  • 600 glamb cubes
  • 1onion
  • 2 tbspolive oil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Begin by cutting 600 g of lamb into uniform cubes, roughly 1.5 inches each. This ensures even cooking. Peel and cut 1 onion into similar-sized chunks. Thread the lamb and onion alternately onto skewers, leaving a little space between each piece for even heat distribution.
  2. In a small bowl, combine 2 tablespoons of olive oil with 1 teaspoon of cumin. Stir well to create a marinade. Generously coat the lamb and onion skewers with this mixture, ensuring each piece is well covered. This step infuses the meat with flavor and helps it stay moist during grilling.
  3. Season the skewers with fine sea salt and black pepper to taste. The salt enhances the natural flavors of the lamb, while the pepper adds a subtle heat. Make sure to season evenly on all sides for a balanced taste.
  4. Preheat your grill to medium-high heat. If using a stovetop grill pan, place it over medium-high heat until it is hot enough that a drop of water sizzles upon contact. This high heat is crucial for achieving a good sear on the lamb.
  5. Place the skewers on the grill or grill pan. Cook for about 3-4 minutes on each side. You're looking for a rich, brown crust on the lamb and a slight char on the onions. The lamb should be tender and juicy on the inside, with a slight pink center.
  6. Once the skewers are cooked to your liking, remove them from the grill. Let them rest for a few minutes to allow the juices to redistribute within the meat. This resting period ensures the lamb remains juicy when served.
  7. Finish by giving the skewers a final sprinkle of sea salt to taste, enhancing the flavors just before serving. Arrange them on a platter and serve immediately, encouraging everyone to dig in and enjoy the communal spirit of Caribbean dining.
