Ingredients

Method

  1. Begin by preparing the vegetables. If using peppers, slice off the tops and remove the seeds and membranes. If using tomatoes, cut a thin slice off the top and scoop out the seeds and pulp with a spoon, being careful not to pierce the sides. Reserve the tops for later use. Rinse the vegetables under cold water and set them aside to drain on a clean kitchen towel.
  2. Rinse 150 g of rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky. In a medium saucepan, bring 300 ml of water to a boil. Add the rice, reduce the heat to low, cover, and let it simmer until the rice is tender and the water is absorbed, about 15 minutes. Fluff the rice with a fork and set aside.
  3. Finely chop 1 onion and any herbs you have chosen to use. In a large skillet, heat 80 ml of olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent and fragrant, about 5 minutes. Stir in the herbs and continue to cook for another minute to release their aroma.
  4. Combine the cooked rice with the sautéed onion and herbs in the skillet. Season the mixture with fine sea salt and black pepper to taste. Stir well to ensure the rice is evenly coated with the oil and seasonings. Taste and adjust the seasoning if necessary, keeping in mind that the filling should be flavorful and well-seasoned.
  5. Preheat your oven to 180°C (350°F). Stuff each prepared vegetable with the rice mixture, packing it in gently but firmly. Place the stuffed vegetables in a baking dish, standing them upright. Drizzle a little more olive oil over the tops and place the reserved tops back on the vegetables.
  6. Bake the stuffed vegetables in the preheated oven until the vegetables are tender and the tops are slightly browned, about 25 to 30 minutes. The peppers or tomatoes should yield easily to a gentle press with a fork. Remove from the oven and let them cool slightly before serving.
  7. Finish the dish by sprinkling a little more fine sea salt over the tops of the stuffed vegetables just before serving. This final touch enhances the flavor and adds a slight crunch.
