Ingredients

  • 4peppers or tomatoes
  • 150 grice
  • 1onion
  • 80 mlolive oil

Method

  1. Start by preparing your vegetables. If using peppers, slice off the tops and remove the seeds and membranes inside. For tomatoes, cut a thin slice off the top and scoop out the seeds and pulp with a spoon, leaving a sturdy shell. Set these aside as they will be stuffed later.
  2. Rinse 150 g of rice under cold water until the water runs clear to remove excess starch. This step ensures the rice will be fluffy and not sticky. Drain well and set aside.
  3. Finely chop 1 onion. In a medium-sized skillet, heat 80 ml of olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent and fragrant, which should take about 5 minutes. This step builds the base flavor for your stuffing.
  4. Stir in the rinsed rice to the skillet with the onions, allowing it to toast lightly for about 2 minutes. This enhances the nutty flavor of the rice. Add a generous pinch of your chosen herbs, stirring to combine well with the rice and onions.
  5. Carefully stuff the prepared peppers or tomatoes with the rice mixture, pressing down gently to pack it in. Place the stuffed vegetables in a baking dish, ensuring they are snug but not overcrowded.
  6. Drizzle a little more olive oil over the stuffed vegetables and season with fine sea salt and black pepper to taste. Cover the baking dish with foil to trap steam, which helps cook the rice inside the vegetables.
  7. Bake in a preheated oven at 180°C (350°F) until the vegetables are tender and the rice is fully cooked, about 30-40 minutes. The vegetables should be soft to the touch, and the rice should be tender but not mushy.
  8. Once done, remove the foil and let the vegetables cool slightly before serving. Finish with a final sprinkle of fresh herbs for added aroma and flavor. Serve immediately, encouraging everyone to enjoy the dish family-style.
