Chinese Fried Bites 2

Chinese Fried Bites 2 captures the essence of home-style Chinese cooking. It's a dish where vegetables are coated in a light flour mixture, then fried to a golden crisp. The salt is measured by intuition, and oil is used liberally to achieve the perfect texture. Each bite is a balance of crunch and flavor, enhanced by a squeeze of lemon and a sprinkle of fine sea salt and black pepper.

This dish is a staple in Chinese households, where it's prepared with care and shared among family and friends. The simplicity of ingredients—vegetables, flour, and oil—belies the depth of flavor achieved through traditional techniques. It's a celebration of communal dining, where everyone reaches for a piece, savoring the familiar taste of home.

Ingredients

  • 400 gvegetables — sliced
  • 100 gflour
  • for fryingoil
  • lemon — to serve
  • to tastefine sea salt and black pepper

Method

  1. Start by washing and drying 400 g of vegetables thoroughly. Choose vegetables like bell peppers, zucchini, or broccoli for a variety of textures. Cut them into bite-sized pieces, ensuring uniform size for even cooking.
  2. In a large mixing bowl, combine 100 g of flour with a generous pinch of fine sea salt and a few turns of black pepper. Mix well to distribute the seasoning evenly throughout the flour.
  3. Heat a wok or deep frying pan over medium-high heat and pour in enough oil for frying, about 2-3 cm deep. The oil is ready when a small piece of vegetable sizzles and floats to the surface immediately.
  4. Coat the vegetable pieces in the seasoned flour, shaking off any excess. Carefully place them into the hot oil in batches, avoiding overcrowding to maintain the oil temperature.
  5. Fry the vegetables until they turn golden brown and crispy, about 3-4 minutes per batch. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.
  6. Once all the vegetables are fried, squeeze the juice of one lemon over them for a fresh, tangy finish. Toss gently to ensure even distribution of the lemon juice.
  7. Taste and adjust seasoning with additional fine sea salt and black pepper if needed. Serve the Chinese Fried Bites 2 immediately, while they are hot and crispy, as part of a shared meal.
