Chinese Fried Bites 3

Serves 4 to 6 Appetizer vegetarian, Appetizers

Chinese Fried Bites 3

Chinese Fried Bites 3 emerges from the bustling milieu of home kitchens, where generations of family cooks have honed it to perfection without a recipe card in sight. Often whipped up for casual gatherings or when unexpected guests arrive, these bites have become a staple in the impromptu feasts that characterize a lively Chinese household. This version captures the spirit of familial improvisation, with each cook making it their own by instinctively balancing the salt and using a generous hand with the frying oil.

Expect a delightful crunch, where every bite reveals a tender vegetable core wrapped in a golden, crispy coat. The subtle hint of lemon brightens the dish, while fine sea salt and freshly cracked black pepper elevate its simplicity. Best when shared straight from the platter, these fried bites invite everyone to reach in and enjoy, embodying the communal nature of Chinese dining.

Ingredients

  • 400 gvegetables — sliced
  • 100 gflour
  • for fryingoil
  • lemon — to serve
  • to tastefine sea salt and black pepper

Method

  1. Start by washing and cutting the 400 g vegetables into bite-sized pieces. Choose a mix of vegetables that will cook evenly together, such as bell peppers, zucchini, and carrots. Pat them dry with a clean kitchen towel to remove excess moisture, which helps the batter adhere better.
  2. In a large mixing bowl, combine the 100 g flour with a pinch of fine sea salt and black pepper to taste. Gradually add water while stirring until you achieve a smooth, thick batter that can coat the back of a spoon. This batter will form a crispy coating on the vegetables during frying.
  3. Pour enough frying oil into a deep, heavy-bottomed pan or wok to submerge the vegetables halfway. Heat the oil over medium-high heat until it shimmers and a small drop of batter sizzles immediately upon contact. This indicates the oil is hot enough for frying.
  4. Dip each piece of vegetable into the batter, ensuring they are well-coated. Carefully lower them into the hot oil in batches, avoiding overcrowding the pan. Fry the vegetables until they are golden brown and crispy, turning them occasionally with a slotted spoon for even cooking.
  5. Once the vegetables are fried to a golden hue and the batter is crisp, remove them from the oil using the slotted spoon. Drain them on a plate lined with paper towels to absorb excess oil. This step ensures the bites remain crispy.
  6. Transfer the fried vegetables to a serving platter. Squeeze fresh lemon juice over them to add brightness and enhance the flavors. Finish with a sprinkle of fine sea salt to taste, and serve immediately while they are hot and crispy, perfect for sharing.
