Ingredients

  • 600 glamb cubes
  • 1onion
  • 2 tbspolive oil

Method

  1. Start by cutting the 600 g lamb into uniform cubes, about 2.5 cm each, to ensure even cooking. Peel and finely chop the onion, as the small pieces will release more flavor when cooked.
  2. In a large mixing bowl, combine the lamb cubes, chopped onion, 2 tbsp olive oil, and 1 tsp cumin. Use your hands to mix everything thoroughly, ensuring each lamb piece is well-coated with oil and spices. This step is crucial for the lamb to absorb the flavors.
  3. Thread the marinated lamb cubes onto skewers, leaving a small gap between each piece to allow heat to circulate evenly. This will help the lamb cook uniformly and develop a nice char.
  4. Preheat your grill to medium-high heat. If you're using a stovetop grill pan, place it over medium-high heat until it is hot enough that a drop of water sizzles and evaporates immediately.
  5. Place the skewers on the grill or grill pan. Cook the lamb skewers, turning occasionally, until they develop a deep brown crust on all sides. The lamb should be slightly firm to the touch, indicating it's cooked through but still juicy inside.
  6. Once the skewers are cooked, remove them from the heat. Sprinkle fine sea salt and black pepper to taste over the skewers while they are still hot, allowing the seasoning to adhere well.
