Chinese Grilled Skewers 3

Chinese Grilled Skewers 3 is a dish that brings the warmth and comfort of a Chinese home kitchen to your table. Crafted with a focus on simplicity and authenticity, this recipe captures the essence of home-cooked Chinese meals, where the balance of flavors is achieved through intuitive seasoning and the generous use of fat. The skewers are typically enjoyed as a shared dish, embodying the communal spirit of Chinese dining without the need for grand occasions.

The skewers offer a harmonious blend of tender lamb cubes and aromatic onion, kissed by the smokiness of the grill. Olive oil enhances the richness, while cumin adds a warm, earthy note complemented by fine sea salt and black pepper. The result is a symphony of flavors that is both familiar and satisfying, inviting everyone at the table to indulge in its savory allure.

Ingredients

  • 600 glamb cubes
  • 1onion
  • 2 tbspolive oil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Cut the 600 g lamb cubes into uniform pieces, about 2.5 cm each. This ensures even cooking and helps the meat absorb flavors uniformly. Peel and finely chop the onion, ensuring the pieces are small enough to mix well with the lamb.
  2. In a large mixing bowl, combine the lamb cubes and chopped onion. Drizzle 2 tbsp olive oil over the mixture. Add 1 tsp cumin, and season with fine sea salt and black pepper to taste. Mix thoroughly with your hands, ensuring each piece of lamb is well coated with the oil and spices.
  3. Thread the seasoned lamb cubes onto skewers, leaving a small gap between each piece to allow for even cooking. If using wooden skewers, soak them in water for about 30 minutes beforehand to prevent burning.
  4. Preheat your grill or grill pan to high heat. Once hot, place the skewers on the grill. Cook the skewers, turning occasionally, until the lamb is browned on all sides and cooked to your desired doneness. Look for a slightly charred exterior with a juicy interior; this usually takes about 8-10 minutes, depending on the heat and size of the cubes.
  5. Remove the skewers from the grill and let them rest for a couple of minutes. This allows the juices to redistribute within the meat, ensuring a tender bite. Finish with a final sprinkle of fine sea salt to taste before serving. Arrange the skewers on a platter and serve immediately, encouraging diners to share and enjoy the communal experience.
