Chinese Meat Pastry Bites 2

Chinese Meat Pastry Bites 2 captures the essence of home-cooked comfort, as found in countless kitchens across China. This dish, often prepared for family gatherings or casual dinners, is an embodiment of how simplicity can bring profound satisfaction. With hands that have measured salt by feel and eyes that know the right shade of golden-brown, these bites are made by instinct and taste memory, not by rote.

With each bite, expect a satisfying crunch followed by the savory warmth of well-seasoned beef and sweet onions, all wrapped in delicate pastry. The generous use of fat ensures a rich flavor, while hand-judged salt and pepper highlight the natural tastes. These are meant to be shared, with everyone reaching for seconds at a table filled with laughter and camaraderie.

Ingredients

  • 300 gground beef
  • 1onion
  • 12pastry wrappers
  • for fryingoil
  • to tastefine sea salt and black pepper

Method

  1. Begin by finely dicing 1 onion. This will ensure that the onion cooks evenly and integrates well with the ground beef, providing a balanced flavor throughout the filling.
  2. In a medium-sized mixing bowl, combine 300 g ground beef with the diced onion. Season generously with fine sea salt and black pepper to taste, mixing thoroughly with your hands or a spoon until the onion is evenly distributed throughout the meat.
  3. Heat a large skillet over medium-high heat and add enough oil for frying, about 2 tablespoons. Once the oil shimmers, indicating it's hot enough, add the beef and onion mixture. Stir frequently, breaking up any large clumps, and cook until the beef is browned and the onions are translucent and soft, with no pink remaining in the meat.
  4. Transfer the cooked beef and onion mixture to a plate lined with paper towels to drain excess oil. Allow it to cool slightly, making it easier to handle when filling the pastry wrappers.
  5. Lay out the 12 pastry wrappers on a clean surface. Place a spoonful of the beef mixture in the center of each wrapper. Fold the edges over the filling, pinching or pleating to seal the edges securely, ensuring no filling escapes during frying.
  6. In the same skillet, add more oil if necessary to ensure a depth of about 1/4 inch. Heat the oil over medium heat until it reaches shimmering hot again. Carefully place the sealed pastry bites in the oil, seam side down, and fry until golden brown and crispy on each side, about 2-3 minutes per side.
  7. Remove the fried pastry bites from the skillet and drain on paper towels to remove excess oil. Taste one and adjust the seasoning with additional fine sea salt if needed.
  8. Serve the Chinese Meat Pastry Bites immediately while they're hot and crispy, arranged on a platter for sharing. Enjoy them as a delightful appetizer or snack.
