Chinese Seafood Fritters 2

Serves 4 to 6 Appetizer seafood, Appetizers

Chinese Seafood Fritters 2

Chinese Seafood Fritters 2 captures the essence of home-cooked comfort, often gracing the family table during casual weekend lunches. This dish is a staple in Chinese homes, where the informal setting allows for generous helpings and spontaneous gatherings. It reflects the essence of everyday culinary practice, where precise measurements give way to instinct, and the cook's hand becomes the most trusted tool.

The fritters, crisp from a generous bath in hot oil, offer a delightful contrast to their tender, seafood-filled centers. Each bite is a harmonious blend of brininess from the sea and the subtle tang of lemon, making it a simple yet satisfying dish. Salt is sprinkled with intuition, enhancing the natural flavors and inviting every diner to reach for seconds.

Ingredients

  • 400 gshrimp or white fish
  • 100 gflour
  • 1egg
  • for fryingoil
  • lemon — to serve
  • to tastefine sea salt

Method

  1. Begin by preparing the seafood. If using shrimp, peel and devein them, then chop into small pieces. If using white fish, ensure it's boneless and cut into small cubes. This will help the seafood cook evenly and blend well with the batter.
  2. In a mixing bowl, combine 100 g of flour and 1 beaten egg to form a smooth batter. Gradually add water if needed to achieve a thick, yet pourable consistency. The batter should coat the back of a spoon without dripping too quickly.
  3. Gently fold the prepared seafood into the batter, ensuring each piece is well-coated. This step is crucial to ensure the seafood is evenly distributed and each fritter has a good balance of batter and seafood.
  4. Heat a generous amount of oil in a deep frying pan over medium-high heat. The oil should be deep enough to submerge the fritters halfway. Test the oil by dropping a small amount of batter into it; it should sizzle and rise to the surface quickly.
  5. Carefully spoon the batter into the hot oil, forming small fritters. Avoid overcrowding the pan to maintain the oil temperature. Fry the fritters until they are golden brown on the outside and the seafood is cooked through, which you can check by cutting one open to ensure the seafood is opaque.
  6. Once cooked, remove the fritters from the oil using a slotted spoon and drain on paper towels. This will help remove excess oil and keep the fritters crisp.
  7. Finish the fritters by sprinkling them with fine sea salt to taste. Serve immediately with lemon wedges on the side for a fresh, zesty contrast.
