Ingredients

  • 4peppers or tomatoes
  • 150 grice
  • 1onion
  • 80 mlolive oil
  • herbs — chopped

Method

  1. Begin by preparing all the components. Rinse 150 g of rice under cold water until the water runs clear, then cook it according to package instructions. While the rice is cooking, cut the tops off 4 peppers or tomatoes and remove the seeds and membranes, creating a hollow space for stuffing. Finely chop 1 onion and set it aside.
  2. Once the rice is cooked, heat 80 ml of olive oil in a large skillet over medium heat. Add the chopped onion to the skillet, stirring occasionally, until it becomes translucent and soft, releasing a sweet aroma. This should take about 5 minutes. Add your choice of herbs, finely chopped, to the onions, and stir for an additional minute to release their fragrance.
  3. Combine the cooked rice with the onion and herb mixture in the skillet, stirring well to ensure everything is evenly mixed. Season the mixture with fine sea salt and black pepper to taste, ensuring the flavors are balanced and to your liking. The rice should be well-coated with the oil and herbs, and the aroma should be savory and inviting.
  4. Preheat your oven to 180°C (350°F). Stuff each prepared pepper or tomato with the rice mixture, pressing down gently to pack it in without breaking the vegetables. Arrange the stuffed vegetables in a baking dish, ensuring they are snug but not overcrowded.
  5. Drizzle a little more olive oil over the tops of the stuffed vegetables to help them roast and develop a slight char. Place the baking dish in the preheated oven. Bake until the vegetables are tender and the tops are slightly browned, which should take about 25-30 minutes. You will know they are done when the vegetables are soft to the touch and the tops are golden.
