Ingredients

  • 3zucchini — grated
  • 2eggs
  • 4 tbspflour

  1. Start by grating the 3 zucchini using the large holes of a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial to ensure your fritters are crispy and not soggy.
  2. In a large mixing bowl, beat 2 eggs until well combined. Add the squeezed zucchini to the eggs, followed by 4 tablespoons of flour. Mix everything together until you have a uniform batter.
  3. Season the batter with fine sea salt and black pepper to taste. Finely chop a handful of your favorite herbs, such as cilantro or parsley, and fold them into the mixture. The herbs will add freshness and a burst of flavor to the fritters.
