Colombian Crispy Fritters 3

Colombian Crispy Fritters 3 brings the comforting essence of Colombian home cooking straight to your table. This dish, cherished for its simplicity and flavor, is a common fixture at family meals, where the ingredients are staples in Colombian pantries. It's a dish that exemplifies the Colombian home cook's approach: intuitive and generous, with salt and oil measured by feel rather than scale, echoing the warmth of shared family recipes.

Bite into the fritters to discover a delightful contrast between the crispy exterior and the tender, savory interior. The zucchini provides a subtle sweetness, enhanced by the savory herbs and perfectly balanced seasoning. Each fritter is a small celebration of texture and taste, inviting you to savor each bite like a Colombian home cook would intend.

Ingredients

  • 3zucchini — grated
  • 2eggs
  • 4 tbspflour
  • for fryingoil
  • herbs — chopped
  • to tastefine sea salt and black pepper

Method

  1. Begin by grating the 3 zucchini using the large holes of a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial to ensure the fritters are crispy and not soggy.
  2. In a large mixing bowl, beat the 2 eggs until they are well combined. Add the squeezed zucchini to the eggs, followed by 4 tablespoons of flour. Stir the mixture until the flour is fully incorporated and the batter is smooth.
  3. Finely chop your choice of herbs, such as cilantro or parsley, and add them to the zucchini mixture. Season with fine sea salt and black pepper to taste. Mix everything thoroughly to distribute the herbs and seasoning evenly throughout the batter.
  4. In a large skillet, pour enough oil for frying to cover the bottom of the pan generously. Heat the oil over medium-high heat until it shimmers but is not smoking. This indicates the oil is hot enough to fry the fritters.
  5. Using a spoon, drop spoonfuls of the zucchini mixture into the hot oil, flattening them slightly with the back of the spoon to form small patties. Fry the fritters in batches, ensuring not to overcrowd the pan.
  6. Cook the fritters until the edges turn a deep golden brown and the centers are firm, about 3-4 minutes per side. Carefully flip them using a spatula and continue frying the other side until equally golden and crispy.
  7. Once cooked, transfer the fritters to a plate lined with paper towels to drain any excess oil. Immediately sprinkle a pinch of fine sea salt over the hot fritters to enhance their flavor.
  8. Serve the Colombian Crispy Fritters 3 immediately while they are still hot and crispy. These fritters are perfect for sharing and are best enjoyed fresh from the pan.
