Colombian Grilled Skewers 2

Colombian Grilled Skewers 2 is a beloved fixture at home tables across Colombia, embodying the spirit of sharing and savoring together. This version reflects the home-cooked tradition, with salt measured instinctively and a generous hand with the fat, ensuring rich flavors and tender bites. It's a dish that often graces the table during family gatherings, making it a staple in many households.

These skewers boast a succulent blend of lamb and onion, marinated with olive oil and cumin for warmth and depth. The seasoning is left to the cook's discretion, allowing for a personalized touch. As each skewer is grilled, the aroma of cumin mingles with the savory lamb, offering a mouthwatering preview of the juicy, well-seasoned meat to come.

Ingredients

  • 600 glamb cubes
  • 1onion
  • 2 tbspolive oil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Start by preparing the lamb cubes and onion. Cut the onion into quarters and separate the layers. This will allow the onion to cook evenly and impart its flavor to the lamb. Thread the lamb cubes and onion layers alternately onto skewers, ensuring that each skewer has an even distribution of meat and onion.
  2. In a small bowl, combine 2 tablespoons of olive oil with 1 teaspoon of cumin. Stir well to create a marinade. This mixture will infuse the lamb with a warm, earthy flavor that complements the sweetness of the onion.
  3. Brush the cumin-infused olive oil generously over the skewers, ensuring each piece of lamb and onion is well-coated. This step is crucial for both flavor and to prevent the meat from sticking to the grill.
  4. Preheat a grill or grill pan over medium-high heat. Once hot, place the skewers on the grill. You should hear a sizzle as the skewers hit the grill, indicating the right temperature.
  5. Grill the skewers, turning occasionally, until the lamb is browned on all sides and cooked to your desired level of doneness. The lamb should be juicy with a slight char on the edges, while the onion should be tender and slightly caramelized.
  6. Remove the skewers from the grill and let them rest for a minute. This allows the juices to redistribute within the meat, ensuring each bite is flavorful and moist.
  7. Finish by sprinkling fine sea salt and freshly ground black pepper over the skewers to taste. Serve immediately, encouraging everyone at the table to share and enjoy the communal experience.
