Method

  1. Begin by finely dicing 1 onion. This will ensure that the onion cooks evenly and blends well with the ground beef, providing a uniform texture and flavor throughout the filling.
  2. In a large skillet, heat 2 tablespoons of frying oil over medium-high heat. Once the oil is shimmering, add the diced onion. Sauté the onion until it becomes translucent and slightly golden, which should take about 5 minutes. This step builds the base flavor for your filling.
  3. Add 300 g of ground beef to the skillet with the onions. Use a wooden spoon to break up the meat into small pieces, ensuring it cooks evenly. Cook until the beef is browned and cooked through, with no pink remaining. This should take about 7-10 minutes, and the beef should be crumbly and well-mixed with the onions.
  4. Season the beef and onion mixture with fine sea salt and black pepper to taste. Stir well to ensure the seasoning is evenly distributed. Taste the mixture and adjust the seasoning if necessary, keeping in mind that the filling should be flavorful enough to stand out in the pastry.
