Colombian Meat Pastry Bites

Colombian Meat Pastry Bites are a beloved staple at home tables across Colombia, crafted with care and a touch of intuition. These small, savory pastries often grace the table during casual family meals or as appetizers at larger gatherings. With their straightforward preparation, they capture the spirit of Colombian home cooking, where recipes are passed down and adapted to suit family tastes.

Biting into one of these pastries, you encounter the savory richness of seasoned ground beef perfectly complemented by the sweetness of softened onions. The pastry, crisp from frying, offers a satisfying contrast to the tender filling. These bites are best enjoyed fresh from the pan, encouraging diners to savor the comforting flavors that come from a cook's well-practiced hand.

Ingredients

  • 300 gground beef
  • 1onion
  • 12pastry wrappers
  • for fryingoil
  • to tastefine sea salt and black pepper

Method

  1. Begin by finely dicing 1 onion. This will ensure that the onion cooks evenly and blends well with the ground beef, providing a consistent flavor throughout the filling.
  2. In a medium-sized skillet, heat enough oil to coat the bottom over medium heat. Add the diced onion and sauté until it becomes translucent and fragrant, stirring occasionally to prevent sticking. This should take about 3-4 minutes, and the onions should be soft but not browned.
  3. Add 300 g of ground beef to the skillet with the onions. Use a wooden spoon to break up the beef into small pieces, ensuring it cooks evenly. Cook until the beef is browned and no longer pink, which will take about 5-7 minutes. Season with fine sea salt and black pepper to taste, stirring to combine the flavors.
  4. Once the beef is cooked through, remove the skillet from the heat and let the mixture cool slightly. This will make it easier to handle when filling the pastry wrappers and prevent them from tearing.
  5. Lay out 12 pastry wrappers on a clean surface. Place a spoonful of the beef and onion mixture in the center of each wrapper, being careful not to overfill. Fold the wrappers over the filling, sealing the edges by pressing them with your fingers or a fork to ensure they are tightly closed.
  6. In a deep frying pan, heat enough oil to submerge the pastries over medium-high heat. Once the oil is hot, carefully add the pastries in batches, frying them until they are golden brown and crispy on all sides. This should take about 2-3 minutes per side. Use a slotted spoon to remove them from the oil and drain on paper towels.
  7. Finish by sprinkling a little more fine sea salt over the hot pastries to enhance their flavor. Serve the Colombian Meat Pastry Bites immediately, while they are still warm and crispy, as part of a shared meal.
