Ingredients

  • 4peppers or tomatoes
  • 150 grice
  • 1onion
  • 80 mlolive oil
  • herbs — chopped

Method

  1. Begin by preparing the vegetables. Cut the tops off 4 peppers or tomatoes and scoop out the seeds and membranes, creating a hollow space for stuffing. Be gentle to avoid tearing the walls of the vegetables, as they need to hold the filling during cooking.
  2. Rinse 150 g of rice under cold water until the water runs clear to remove excess starch. This will prevent the rice from becoming too sticky. Set the rice aside to drain completely.
  3. Finely chop 1 onion and any herbs you have chosen to use. In a medium-sized skillet, heat 80 ml of olive oil over medium heat. Once the oil is shimmering, add the chopped onion and sauté until it becomes translucent and fragrant, about 5 minutes.
  4. Add the drained rice to the skillet with the onions. Stir to coat the rice in the oil and onion mixture, allowing it to toast slightly. This step enhances the flavor of the rice and gives it a nutty aroma.
  5. Pour in enough water to cover the rice by about 1 cm. Add herbs and season with fine sea salt and black pepper to taste. Bring the mixture to a gentle simmer, then cover and reduce the heat to low. Cook until the rice is tender and has absorbed all the liquid, with a texture that is fluffy and separate.
  6. Stuff each prepared pepper or tomato with the cooked rice mixture, pressing down gently to fill them completely without overpacking. Arrange the stuffed vegetables in a baking dish, ensuring they are snug but not overcrowded.
  7. Drizzle a little more olive oil over the tops of the stuffed vegetables to encourage browning. Place in a preheated oven at 180°C (350°F) and bake until the vegetables are tender and the tops are lightly browned, about 25-30 minutes. The vegetables should be soft but still hold their shape.
  8. Remove the stuffed vegetables from the oven and finish with a sprinkle of fine sea salt to enhance the flavors. Serve immediately, allowing everyone at the table to enjoy the warmth and aroma of this Colombian home-cooked dish.
