  1. Begin by grating 3 zucchini using the coarse side of a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial to ensure the fritters are crispy, as excess water will make them soggy.
  2. In a large mixing bowl, combine the drained zucchini with 2 eggs and 4 tablespoons of flour. Mix well until the ingredients are fully incorporated, forming a thick batter. Season the mixture with fine sea salt and black pepper to taste, ensuring the seasoning is evenly distributed.
  3. Finely chop a handful of your preferred herbs, such as dill or parsley, and add them to the zucchini mixture. Stir the herbs into the batter, allowing their flavors to meld with the zucchini. This will add a fresh, aromatic note to the fritters.
