Ingredients

Method

  1. Start by grating the 3 zucchini using a box grater. Once grated, place the zucchini in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial to ensure the fritters become crispy rather than soggy when fried.
  2. In a large mixing bowl, combine the squeezed zucchini with 2 eggs and 4 tablespoons of flour. Mix well until the ingredients are fully incorporated, forming a thick batter. Season the mixture with fine sea salt and black pepper to taste, adjusting based on your preference.
  3. Chop your choice of fresh herbs, such as parsley or dill, and fold them into the batter. The herbs will add a fresh aroma and flavor to the fritters, enhancing their Eastern European character.
  4. Heat a generous amount of oil in a large, heavy-bottomed frying pan over medium-high heat. The oil should be enough to cover the bottom of the pan to allow the fritters to fry evenly.
