Eastern European Crispy Fritters

Serves 4 to 6 Appetizer vegetarian, Appetizers

Eastern European Crispy Fritters

Crispy fritters like these are a staple on Eastern European home tables, often enjoyed as a light lunch or a simple dinner accompaniment. These fritters celebrate the humble zucchini, a vegetable that thrives in Eastern European gardens. The dish offers a comforting familiarity, drawing on traditions where salt is judged by hand and the generous use of fat is a given.

Each bite of these fritters promises a delightful crunch, giving way to a tender, savory center. The zucchini's subtle sweetness is elevated by fresh herbs, while the eggs and flour bind everything in a flavorful embrace. A sprinkle of fine sea salt and a dash of black pepper finish them off, delivering a satisfying balance of taste and texture.

Ingredients

  • 3zucchini — grated
  • 2eggs
  • 4 tbspflour
  • for fryingoil
  • herbs — chopped
  • to tastefine sea salt and black pepper

Method

  1. Begin by grating 3 zucchini using the large holes of a box grater. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step is crucial to ensure your fritters become crispy rather than soggy.
  2. In a large mixing bowl, combine the squeezed zucchini with 2 eggs, 4 tablespoons of flour, and a pinch of fine sea salt and black pepper. Mix well until the ingredients are fully integrated, creating a thick batter. The batter should be cohesive but not too runny; adjust with a bit more flour if necessary.
  3. Chop your choice of herbs finely, such as dill or parsley, and add them to the batter. Stir to distribute the herbs evenly, which will infuse the fritters with fresh, aromatic flavors typical of Eastern European cuisine.
  4. Heat a generous amount of frying oil in a large, heavy-bottomed skillet over medium-high heat. The oil should be hot enough that a small drop of batter sizzles immediately upon contact, indicating it's ready for frying.
  5. Using a tablespoon, carefully drop spoonfuls of the batter into the hot oil, flattening them slightly with the back of the spoon to form small patties. Ensure there is enough space between each fritter to allow them to crisp up properly.
  6. Fry the fritters for about 3-4 minutes on each side, or until they develop a deep golden-brown crust. The edges should be crispy, and the center should be cooked through, with a firm texture when pressed lightly with a spatula.
  7. Once cooked, transfer the fritters to a plate lined with paper towels to drain any excess oil. Immediately sprinkle a little more fine sea salt over them while they are still hot, enhancing their flavor.
  8. Serve the fritters at once, ideally with a dollop of sour cream or yogurt on the side, if desired. These crispy delights are best enjoyed fresh, with their contrasting textures of a crunchy exterior and tender interior.
