Method

  1. Begin by preparing the vegetables. Choose a mix of your favorite Eastern European vegetables such as potatoes, carrots, or bell peppers. Wash and peel them as necessary, then cut them into uniform bite-sized pieces, about 1-2 cm in size. This ensures even cooking and a pleasant texture in the final dish.
  2. In a large mixing bowl, combine the 100 g of flour with a generous pinch of fine sea salt and freshly ground black pepper. Toss the vegetable pieces in the flour mixture until they are evenly coated. This coating will help create a crispy exterior when fried.
  3. Heat a generous amount of oil in a large, heavy-bottomed skillet over medium-high heat. You want enough oil to cover the bottom of the pan by about 1 cm. Once the oil is shimmering, test it by dropping a small piece of coated vegetable into the oil; it should sizzle immediately.
  4. Carefully add the floured vegetables to the hot oil in a single layer, making sure not to overcrowd the pan. Fry them, turning occasionally with a slotted spoon, until they are golden brown and crispy on all sides. This should take about 5-7 minutes, depending on the size of your pieces.
  5. Once the vegetables are fried to a golden brown, remove them from the oil using the slotted spoon and place them on a plate lined with paper towels. This will help absorb any excess oil and keep the bites crispy.
  6. Finish the dish by squeezing fresh lemon juice over the fried bites while they are still hot. This adds a bright, tangy flavor that complements the richness of the fried vegetables. Taste and adjust the seasoning with more salt and pepper if needed.
