Generous portions of lamb cubes are marinated with onions and olive oil, bringing a traditional touch to this well-loved dish.

The skewers offer a rich and savory experience, with the lamb's natural juices enhanced by a hint of cumin and the subtle sweetness of onion. Salt and black pepper are added by hand, allowing each cook to personalize the flavor. Ingredients

  • 600 glamb cubes
  • 1onion
  • 2 tbspolive oil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing your ingredients. Cut the 600 g of lamb into uniform cubes, about 2.5 cm each, to ensure even cooking. Peel and finely chop the onion, as it will be used to marinate the lamb and add flavor.
  2. In a large mixing bowl, combine the lamb cubes with the chopped onion. Add 2 tablespoons of olive oil and 1 teaspoon of cumin. Mix everything thoroughly with your hands, ensuring each piece of lamb is well-coated with the oil and spices. Let it sit for at least 15 minutes to allow the flavors to meld.
  3. Thread the marinated lamb cubes onto skewers, leaving a small gap between each piece to ensure even cooking. If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.
  4. Preheat your grill or a grill pan over medium-high heat. Once hot, place the skewers on the grill. Cook the lamb for about 10-12 minutes, turning occasionally, until the exterior is nicely charred and the meat is cooked through. The lamb should be slightly firm to the touch and have a juicy interior.
  5. Remove the skewers from the grill and immediately season with fine sea salt and black pepper to taste. The salt will enhance the flavors and the pepper will add a slight kick. Serve the skewers hot, encouraging everyone to share and enjoy the communal experience typical of Eastern European dining.
