Eastern European Meat Pastry Bites 2

Eastern European Meat Pastry Bites 2 brings the essence of home-cooked comfort to the table. This dish is a staple across Eastern European homes, where cooks rely on instinct rather than precise measurements. Generous use of fat and a pinch of salt judged by hand are key to achieving its authentic taste.

The flavor is a straightforward blend of ground beef and onion, encased in a crisp pastry wrapper. Fine sea salt and black pepper are added to taste, enhancing the savory filling. These bites are meant for sharing, capturing the communal spirit of Eastern European dining.

Ingredients

  • 300 gground beef
  • 1onion
  • 12pastry wrappers
  • for fryingoil
  • to tastefine sea salt and black pepper

Method

  1. Begin by finely chopping 1 onion. The pieces should be small enough to blend well with the ground beef, ensuring even distribution and flavor in each bite. Set the chopped onion aside.
  2. In a mixing bowl, combine 300 g ground beef with the chopped onion. Season the mixture generously with fine sea salt and black pepper to taste, mixing thoroughly with your hands until the ingredients are well incorporated and the beef is evenly seasoned.
  3. Lay out the 12 pastry wrappers on a clean, dry surface. Place a small spoonful of the beef mixture onto the center of each wrapper. Fold the edges of the wrappers over the filling, pinching them together to seal, ensuring no gaps are left for the filling to escape during cooking.
  4. In a large frying pan, heat enough oil to generously coat the bottom of the pan over medium-high heat. The oil is ready when it shimmers and a small piece of pastry sizzles upon contact.
  5. Carefully place the sealed pastry bites into the hot oil, seam side down. Fry them in batches if necessary, ensuring they have enough space to cook evenly without touching. Cook until the pastry is golden brown and crisp, about 3-4 minutes per side, flipping once to ensure even cooking.
  6. Once the pastry bites are golden brown and the beef inside is cooked through, remove them from the pan and drain on paper towels to remove excess oil.
  7. Finish by sprinkling a pinch more fine sea salt over the hot pastry bites to enhance their flavor. Serve immediately while they are warm and crisp, perfect for sharing around the table.
