Serves 4 to 6 Appetizer vegetarian, Appetizers

Filipino Fried Bites 2

Filipino Fried Bites 2 brings the comforting essence of Filipino home cooking to your table. This dish is a staple at family gatherings, where the focus is on generous flavors and shared enjoyment. The vegetables are coated in a simple flour mixture and fried to golden perfection, seasoned with a pinch of salt and pepper, just as a Filipino family cook would do it.

The result is a crispy, savory treat with a hint of zest from a squeeze of lemon. It's a dish meant for sharing, inviting everyone to gather around and enjoy the familiar taste of home. This version captures the essence of how it's prepared in Filipino households, where the emphasis is on flavor and togetherness.

Ingredients

  • 400 gvegetables — sliced
  • 100 gflour
  • for fryingoil
  • lemon — to serve
  • to tastefine sea salt and black pepper

Method

  1. Start by preparing the vegetables. Wash and dry 400 g of your chosen vegetables thoroughly. Cut them into bite-sized pieces, ensuring uniformity for even cooking. This could include slicing, dicing, or chopping depending on the vegetable type.
  2. In a large mixing bowl, combine the cut vegetables with 100 g of flour. Toss them well to ensure each piece is lightly coated. This flour coating will help achieve a crispy texture once fried.
  3. Heat a generous amount of oil in a deep frying pan or pot over medium-high heat. The oil should be deep enough to submerge the vegetable pieces. Test the oil's readiness by dropping a small piece of coated vegetable into the oil; it should sizzle and rise to the surface immediately.
  4. Carefully add the flour-coated vegetables to the hot oil in batches, avoiding overcrowding the pan. Fry them until they turn golden brown and crispy, which should take about 3-5 minutes per batch. Use a slotted spoon to remove the fried vegetables and transfer them to a plate lined with paper towels to drain excess oil.
  5. While the vegetables are still hot, season them with fine sea salt and black pepper to taste. Squeeze fresh lemon juice over the top to add a bright, tangy flavor that complements the crispy texture.
  6. Serve the Filipino Fried Bites 2 immediately while they are hot and crispy. Arrange them on a serving platter and enjoy them as a delicious snack or side dish, perfect for sharing with family and friends.
