Ingredients

  • 600 glamb cubes
  • 1onion
  • 2 tbspolive oil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Begin by cutting the 600 g of lamb into uniform cubes, about 1 inch in size. This ensures even cooking. Peel and finely chop the onion, as it will be used to infuse flavor into the lamb.
  2. In a large mixing bowl, combine the lamb cubes with the chopped onion. Drizzle 2 tbsp of olive oil over the mixture, ensuring each piece is lightly coated. Sprinkle 1 tsp of cumin over the lamb, and season generously with fine sea salt and black pepper to taste. Mix everything thoroughly with your hands, massaging the spices and oil into the meat for even distribution.
  3. Allow the lamb to marinate for at least 30 minutes at room temperature. This resting time helps the flavors to meld and the meat to absorb the spices, enhancing the final taste.
  4. Thread the marinated lamb cubes onto skewers, leaving a small space between each piece to allow for even cooking. If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.
  5. Preheat your grill to medium-high heat. Once heated, place the skewers on the grill. Cook the lamb for about 10-12 minutes, turning occasionally to ensure all sides are evenly charred. You’ll know the lamb is done when it develops a deep brown crust and feels firm to the touch, with a slight give.
  6. Remove the skewers from the grill and let them rest for a few minutes. This allows the juices to redistribute within the meat, keeping it moist.
  7. Finish by sprinkling a little more fine sea salt over the skewers if needed, to enhance the flavors. Serve the skewers immediately while they are hot, making sure to share them around the table for everyone to enjoy.
