Ingredients

  • 600 glamb cubes
  • 1onion
  • 2 tbspolive oil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Start by cutting the 600 g lamb cubes into uniform pieces, about 1.5 inches each, to ensure even cooking. Peel and finely chop the onion, as this will be used to marinate the lamb and infuse it with flavor.
  2. In a large mixing bowl, combine the lamb cubes with the chopped onion, 2 tbsp olive oil, and 1 tsp cumin. Toss everything together thoroughly, ensuring each piece of lamb is well-coated with the oil and spices. This step helps to tenderize the meat and allows the flavors to penetrate.
  3. Season the marinated lamb generously with fine sea salt and black pepper. Use your hands to mix again, making sure the seasoning is evenly distributed. Let the lamb sit for at least 15 minutes to absorb the flavors, which will enhance the taste once grilled.
  4. Thread the marinated lamb cubes onto skewers, leaving a small space between each piece to allow for even cooking. If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.
  5. Preheat your grill to medium-high heat. Once hot, place the skewers on the grill. Cook the lamb skewers for about 8-12 minutes, turning occasionally. Look for a nicely charred exterior and a juicy interior; the lamb should be slightly pink in the center for optimal tenderness.
