Indian Fried Bites 3

Indian Fried Bites 3 is a dish that finds its roots in the heart of Indian home kitchens, where the essence of family cooking thrives. It's an everyday delight, emerging from the rhythm of daily life rather than any grand celebration. This recipe captures the intimate, unmeasured art of cooking, where salt is judged by hand and the oil flows generously, embodying the spirit of sharing at a family table.

Expect a delightful crunch with every bite, as the vegetables enveloped in a light flour coating meet the crackling hot oil. The contrast of textures and the subtle seasoning of fine sea salt and black pepper come alive with a squeeze of fresh lemon, offering a burst of tanginess. These bites are best enjoyed fresh from the pan, shared among those gathered around the table.

Ingredients

  • 400 gvegetables — sliced
  • 100 gflour
  • for fryingoil
  • lemon — to serve
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing the vegetables. Choose a mix of your favorite vegetables such as potatoes, cauliflower, or bell peppers, ensuring they are washed and cut into bite-sized pieces. This ensures even cooking and allows the flavors to penetrate each piece.
  2. In a large mixing bowl, combine the 100 g of flour with a pinch of fine sea salt and black pepper to taste. This seasoned flour will form the base of your batter, adding flavor and a crisp texture to the fried bites.
  3. Gradually add water to the flour mixture, stirring continuously until a smooth, thick batter forms. The batter should be thick enough to coat the back of a spoon but not too runny, ensuring it clings well to the vegetables.
  4. Heat a generous amount of oil in a deep frying pan over medium-high heat. The oil should be hot enough that a small drop of batter sizzles immediately upon contact, indicating it's ready for frying.
  5. Dip each piece of vegetable into the batter, ensuring it is fully coated, and carefully place it into the hot oil. Fry in batches to avoid overcrowding the pan, which can lower the oil temperature and result in soggy bites.
  6. Fry the vegetables until they are golden brown and crisp on all sides, turning occasionally with a slotted spoon. The bites are done when they are uniformly golden and the batter is crisp to the touch.
  7. Remove the fried bites from the oil and drain on a paper towel-lined plate to remove excess oil. This step ensures the bites remain crisp and not greasy.
  8. Finish by sprinkling the fried bites with a little more fine sea salt and a squeeze of fresh lemon juice to enhance the flavors. Serve immediately while they are hot and crisp, perfect for sharing at the table.
