Ingredients

  • 600 glamb cubes

Method

  1. Begin by preparing the ingredients. Cut the 600 g lamb into uniform cubes, roughly 1.5 inches each, to ensure even cooking. Peel and finely chop the onion, which will be used to marinate the lamb and infuse it with flavor.
  2. In a large mixing bowl, combine the lamb cubes, chopped onion, 2 tbsp olive oil, and 1 tsp cumin. Use your hands to mix everything thoroughly, ensuring the lamb is well-coated with the oil and spices. This step helps the flavors penetrate the meat.
  3. Season the mixture with fine sea salt and black pepper to taste. Be generous with the seasoning, as it will enhance the natural flavors of the lamb and spices. Let the mixture marinate for at least 30 minutes at room temperature, allowing the flavors to meld.
  4. Thread the marinated lamb cubes onto skewers, leaving a small gap between each piece to ensure even cooking. If using wooden skewers, soak them in water for at least 30 minutes beforehand to prevent burning.
  5. Preheat a grill or grill pan over medium-high heat. Once hot, place the skewers on the grill. Cook the skewers, turning occasionally, until the lamb is browned on all sides and cooked to your liking. The lamb should be slightly charred on the outside and juicy on the inside, with a rich aroma from the cumin.
