Ingredients

  • 600 glamb cubes
  • 1onion
  • 2 tbspolive oil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Begin by cutting the 600 g of lamb into uniform cubes, about 1-inch each, to ensure even cooking. Peel and finely chop the onion. This will help infuse the lamb with flavor as it cooks.
  2. In a large mixing bowl, combine the lamb cubes, chopped onion, 2 tbsp olive oil, and 1 tsp cumin. Mix thoroughly with your hands, ensuring each piece of lamb is well-coated with the oil and spices. This step is crucial for building flavor and ensuring the spices adhere to the meat.
  3. Season the mixture with fine sea salt and black pepper to taste. Use your hands to mix again, ensuring the seasoning is evenly distributed. The salt will help tenderize the meat as it marinates.
  4. Thread the seasoned lamb cubes onto skewers, leaving a small gap between each piece to allow for even cooking. If using wooden skewers, soak them in water for at least 30 minutes beforehand to prevent burning.
