Ingredients

  • 400 gshrimp or white fish
  • 100 gflour

Method

  1. Start by cleaning and deveining 400 g of shrimp or cutting 400 g of white fish into small, bite-sized pieces. Pat them dry with a paper towel to remove excess moisture, as this will help the batter adhere better and ensure a crisp texture when fried.
  2. In a mixing bowl, combine 100 g of flour with a pinch of fine sea salt. Crack 1 egg into the bowl and whisk together until you have a smooth batter. The consistency should be thick enough to coat the back of a spoon but not too runny.
  3. Heat enough oil for frying in a deep pan over medium-high heat. Test the oil by dropping a small amount of batter into it; it should sizzle and rise to the surface immediately, indicating the oil is ready for frying.
  4. Dip each piece of shrimp or fish into the batter, ensuring it is fully coated. Carefully place the coated seafood into the hot oil, being cautious not to overcrowd the pan, which can lower the oil temperature and result in soggy fritters.
  5. Fry the seafood in batches, turning occasionally, until the fritters are golden brown and crisp on all sides. This should take about 3-4 minutes per side, depending on the size of the pieces. The fritters should have a firm texture and a golden crust.
  6. Once cooked, remove the fritters from the oil using a slotted spoon and drain on paper towels to remove excess oil. While still hot, sprinkle with additional fine sea salt to taste, enhancing the flavor of the seafood.
  7. Serve the Indian Seafood Fritters immediately with lemon wedges on the side for squeezing over the top. The acidity of the lemon will balance the richness of the fried seafood, making it a delightful dish to share.
