Indian Stuffed Vegetables 2 is a cherished dish often prepared in home kitchens across India, where it embodies the warmth and generosity of home cooking. The dish is a harmonious blend of tender vegetables cradling a savory mix of rice, onion, and herbs. Ingredients

  • 4peppers or tomatoes
  • 150 grice
  • 1onion
  • 80 mlolive oil
  • herbs — chopped
  • to tastefine sea salt and black pepper

Method

  1. Start by washing the 4 peppers or tomatoes thoroughly. If using peppers, slice off the tops and remove the seeds and membranes. For tomatoes, cut a thin slice off the top and scoop out the insides gently with a spoon, being careful not to pierce the outer skin. Set the prepared vegetables aside.
  2. Rinse 150 g of rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky. Drain the rice well and set aside.
  3. Finely chop 1 onion. Heat 80 ml of olive oil in a large skillet over medium heat. Add the chopped onion and sauté until it turns translucent and begins to caramelize, releasing a sweet aroma.
  4. Add the rinsed rice to the skillet with the onions. Stir continuously for about 2-3 minutes until the rice grains are well coated with oil and slightly toasted. This step enhances the nutty flavor of the rice.
  5. Incorporate your choice of herbs into the rice mixture. Common options include cilantro, mint, or a combination of both. Season with fine sea salt and black pepper to taste, ensuring the mixture is well seasoned.
  6. Carefully stuff each prepared pepper or tomato with the rice mixture, pressing down gently to fill them completely. Place the stuffed vegetables upright in a baking dish, ensuring they fit snugly to prevent tipping.
  7. Drizzle a little more olive oil over the stuffed vegetables and cover the dish with aluminum foil. Bake in a preheated oven at 180°C (350°F) until the vegetables are tender and the rice is cooked through, which you can confirm when the rice is soft and the vegetables have a slight wrinkling on the skin.
  8. Remove from the oven and let the stuffed vegetables rest for a few minutes. Finish with a sprinkle of fresh herbs and a final touch of salt if needed. Serve immediately, allowing everyone to enjoy the flavors while they are warm.
